For those not familiar with a ‘dosa,’ it is a gluten free southern Indian crispy crepe made from rice and lentils.   The dosa is rolled up with various fillings in the center such as potato curry or roast lamb and they are served with a sambar curry and coconut chutney on the side.

Even devotees of the dosa will be wowed by the innovative selection on offer.   Dosas are just one of many types of dishes served here, the menu includes a list of daily specials, many types of snacks, appetizers, other entrees and sweets.

I sampled a wonderful appetizer called Sharaabi Golgappa ($4): hollow semolina puffs served with curried potatoes, roasted chickpeas and green sprouted lentils and a vodka pepper and cumin dipping sauce.

The chili paneer ($9) is brimming with fresh flavors including cilantro, chili, garlic, and spiced cheese with sautéed onion and vegetables.   The chili garlic cheese dosa ($8.50) was delicious and tasted of roasted garlic and mozzarella and the Kerala seafood dosa ($10) contained swordfish and shrimp with delicate spices slow-cooked to perfection.

Due to its popularity, another Dosa Factory is opening soon in Waltham.
